If you like tacos like me you need to try my friend Deanna Dorman Baja tacos. These healthy chicken tacos are low in fat but full of flavor.
Skinny Baja Chicken Tacos Recipe
For the Chicken

- 1 pound boneless, skinless chicken breast
- 2 tablespoons extra virgin olive oil
- 2 teaspoons chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground cumin
- salt & pepper to taste
- juice from 1 lime
For the Cabbage Slaw
- 3/4 cup red cabbage, shredded
- 3/4 cup Napa cabbage, shredded
- 1/2 shredded carrot (about 1 large carrot)
- 3 tablespoons nonfat Greek yogurt
- juice from 2 limes
- 1 teaspoon raw honey (optional)
- salt & pepper to taste
For the Spicy Chipotle Sauce
- 1/2 cup nonfat Greek yogurt
- 1-2 ancho chili (canned in sauce)
Toppings
- 8 sprouted corn tortillas
- guacamole
- pico de gallo
- lime wedges for garnish
For the Chicken
- Slice chicken breasts thin, into 1/4 inch strips, and place in a medium bowl. Add remaining ingredients and mix to evenly coat the chicken with olive oil and spices.
- Preheat a large skillet over a medium-high heat.
- Sauté chicken for 5-8 minutes or until lightly browned and the chicken is cooked through.
For the Cabbage Slaw
- While the chicken in cooking prepare the cabbage. Combine all ingredients in a medium bowl and set aside.
For the Spicy Chipotle Sauce
- In a blender or food processor, combine ingredients until smooth. Spoon mixture into a plastic baggy and cut the corner off to open a 1/4 inch.
To assemble
- Arrange chicken, cabbage slaw, pico de gallo, and guacamole on a corn tortilla. Pipe the chipotle sauce over each taco, drizzle with lime juice, and enjoy!
Skinny White Chicken Chili
- 1 tablespoon olive oil
- 1 small or 1/2 large white or yellow onion, finely diced
- 3 garlic cloves minced
- 2 4.5-ounce cans diced green chilies (get mild, if you don’t like spicy)
- 3 tablespoons gluten-free flour any kind
- 3 1/2 cups low sodium chicken broth
- 1/2 cup dairy-free milk or any preferred milk product
- 3 cups cooked shredded or chopped chicken
- 2 15-ounce cans reduced sodium white beans, such as white kidney beans, cannellini or Great Northern beans, rinsed and drained
- 1 1/4 cups frozen corn or canned drained
- 1 tablespoon lime juice
- 1 tablespoon cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt or to taste
- 1/2 teaspoon black pepper
- 1/2 teaspoon red chili flakes
- 1/4 teaspoon cayenne pepper optional, don’t use if you don’t like spicy
- 1/4 cup chopped fresh cilantro
- For serving: fresh lime wedges jalapeno slices, avocado slices, dairy-free yogurt, dairy-free shredded cheese and back to Nature Crackers
Instructions
- Use a large Dutch oven or Crockpot, add the olive oil and heat over medium-high heat to warm.
- Add the onion and sauté, stirring occasionally for about 3 minutes. Stir in garlic, green chilies, and flour and continue to cook for about 2 minutes more and until flour is soaking into mixture.
- Add the chicken broth, milk, chicken, beans, corn, lime juice, cumin, oregano, salt, pepper, red chili flakes, optional cayenne pepper, and bring to a boil.
- Lower heat and allow chili to simmer gently for about 10 minutes.
- Stir in cilantro and taste. Add more salt or other seasonings, as desired.
- Place chili into bowls, and optionally garnish with crackers, avocado, cheese and/or yogurt. About 180 calories per cup
